It all began in the early 2000s, when Claudie Botté went sightseeing in California. There, she discovered the Raw Food trend. Raw food consists of eating mainly uncooked or minimally processed foods, in order to preserve their natural nutrients and enzymes. An idea was born in the mind of this creative and innovative chef. "Why not import this brilliant concept of healthy, raw food to France?".
The idea is as simple as can be: eat unprocessed food that is entirely raw or dehydrated at less than 45°C. This production process keeps the goodness of the food intact and aids digestion. "Why didn't I think of this before?" says Claudie.
